ABOUT
Apex Dining at the Tweed Regional Gallery presents a local yarning circle with insightful food storytelling by Bundjalung elder and custodian of food culture Uncle Franc. These stories are brought to the table with flair by renowned chef Louis Tikaram (of Stanley Chinese Restaurant in Brisbane, and who grew up in the region). He joins in-house chef Andelson Del Vega in preparing a feast of Louis’ signature Singaporean-style Chilli Crab and lemongrass rice.
Partnering perfectly with the chilli crab will be a matching wine from renowned South Australian winery, d’Arenberg. d’Arenberg’s ‘The Dry Ram’ Reisling McLaren Vale 2023 is crisp, citrus core, lightly cloaked in tropical fruit, dry and slightly minerally up front, delicate acid with a slight residual sweet finish.
A welcome vodka rosella spritz by Tweed distillers Taha Distillery is included.
