Welcome to Country Dinner by proud Bundjalung chef Mindy Woods, who’s collaborating with First Nations ally and highly acclaimed chef Christine Manfield to explore connection to Country through food, bringing ancient foods and traditions into the modern kitchen.
This immersive experience of song and dance offers a combined narrative, one of active reconciliation, and a delicious deep dive into local cultural and culinary customs showcasing native ingredients foraged and sourced in the Tweed region.
They will be joined by Tweed rum distillers Birds of Isle, who are serving two of their signature bunya nut rum cocktails during dinner, along with small-batch wines from Freeman Vineyards in the NSW Hilltops region.
