The Tweed, the northern gateway to the Great Southern Reef, is renowned for Australia’s important kelp forests. Kelp and other seaweeds are vital to healthy ocean ecosystems and are emerging as innovative solutions in food security and climate change. This lunch showcases how The Tweed is ideally positioned to lead this innovation!
Pipit already creatively uses seaweed with aged fish, in misos, shoyu, washed cheeses, and jellies, offering a discovery of taste and texture—a flavour-packed experience for any food lover.
